Skinny BLT Pasta Salad

Try this pasta salad chilled or warm with the great BLT taste that we all love! Make healthy swaps with whole grain pasta and low fat mayo & sour cream and enjoy after 3 simple steps.

Yield: 4 servings

Skinny BLT Pasta Salad

Ingredients

  • 8 oz Whole Grain Rotini Pasta
  • 1 cup shredded lettuce leaves
  • 2 tomatoes, diced
  • 4 tablespoons precooked real bacon crumbles
  • 2 tablespoons chopped scallions
  • 2 tablespoon reduced-fat mayonnaise
  • 2 tablespoon reduced-fat sour cream
  • 1/2 cup reduced-fat cheddar cheese

Instructions

  1. Cook noodles, drain & refrigerate for about 20 minutes if you want the pasta chilled, or keep the pasta warm.
  2. Add all other ingredients except cheese to the bowl & mix well.
  3. Top with cheddar cheese and enjoy.

    Well I altered the recipe a bit (mostly b/c I’m terrible at measuring pasta for recipes). Anyway, I used:
    3c dry Piccolini Pasta (high fiber white)
    5tbsp of oscar meyer bacon bits
    4 tbs each of the mayo and sour cream (both reduced fat)
    as called for lettuce and tomato.

    I have the “Lose It!” app and after plugging in the ingredients and getting Five 1-cup servings, it comes 277 calories. Hope this helps!
