Crock Pot Pork Tacos

Here’s another great slow cooker recipe! Takes anywhere from 5-8 hours (depending on temp.), so pop these ingredients in the crock pot in the morning and the dinner practically makes itself! Enjoy :)

Ingredients:

• 1 pound pork tenderloin
• 1 12 oz. jar of salsa
• 1 tablespoon chili powder
• 1 tablespoon ground cumin
• 1 tablespoon brown sugar
• 1 tablespoon jalepeno peppers
• 1 teaspoon cayenne pepper
• 1 teaspoon salt
• 3 cloves garlic, minced

Directions:

  1.  Place pork tenderloin in a crock pot.
  2.  Mix together all other ingredients in a bowl and pour over pork tenderloin.
  3. Cook on low for 8 hours or on high for 5 hours.
  4. Remove pork tenderloin from crock pot and shred using a fork, pull against the grain of the meat.
  5. Return shredded pork tenderloin to crock pot and cook for an additional 30 minutes.
  6. Serve with whole wheat tortillas, reduced fat cheese, reduced fat sour cream, lettuce, tomatoes, and guacamole.

    I made these tacos for my family last night and they loved them! My son did not even know that they were low cal!!! So easy to make. Next time I will use a large pork loin so that we will leftovers!

    Thanks Kim! With just two adults in our house we always have leftovers – I usually turn this dish into quesadillas for a weekend lunch, or add BBQ for yummy sandwiches :)

    I have made these a few times now and my husband and I LOVE them! I use a tortilla that is a corn and wheat blend and add avocado to the top – delicious! I also shared it with some friends and they raved about them. Thanks so much for sharing this :)
