Healthy Dinner Recipes for the week of January 16th-20th
Ok, so this is my first week doing this for skinny mom – but menu planning is a practice that I have done, with varying degrees of intensity, from the day I first lived on my own. The convenience (only one grocery trip per week with a feisty one year old – yes please!), money saving, and health benefits are overwhelming.
I also need to say I am NOT a nutritionist – I pick recipes based on their general healthiness, ease to prepare (remember that one year old thing?) and our personal tastes. I know you may not love all of these recipes, but I do try to mix things up. One trend you’ll see, my husband Billy and I looooove Mexican cuisine. Like, LOVE it.
If you have any favorite recipes, takes on the ones I provide, or questions please don’t hesitate! I find recipes everywhere, the internet, books, magazines, my best friend’s great grandma’s sister’s cousin…. If you have a good one, share!

Monday – January 16th
Turkey Meatloaf with Mashed Cauliflower (you will never eat mashed potatoes again.)
Tuesday - January 17th
Salsa Chicken (with brown rice for the hubby, and broccoli for me!)
Wednesday – January 18th
Cheeseburger Pie (I admit, I eat two serving of this..)
Thursday – January 19th
Slow Cooker Chicken Pot Pie (spoiler alert – this is sooo good for lunch the next day)
Friday – January 20th
Taco Stuffed Peppers (with brown rice for Billy, and extra green peppers diced on the side for me!)
