Yes, it’s my birthday. I have reached what I consider to be a milestone in one’s life as I turn thirty today. Many people have asked me “How does it feel to be thirty?” I can honestly say that I have never been happier and I still feel like I am a teenager, proving age is just a number! Growing up, to celebrate birthdays , my favorite cake was a strawberry cake with strawberry icing and lots of sprinkles. I plan on still celebrating my birthday with my favorite cake, but I have lightened up the recipe. By using a can of soda in the cake mix and replacing the icing with cool whip, these strawberry cupcakes are low in calories and yet they still taste delicious…birthday worthy for sure.
Serving Size: 1 Cupcake (without sprinkles)
Ingredients
- 1 box Pilsbury Moist Supreme Strawberry cake mix
- 1 6 ounce container Dannon Light n Fit Strawberry yogurt
- 2 egg whites
- 3/4 cup Diet 7-UP or you can use 3/4 cup of water
- 1 tub of Cool Whip Free (8 ounce size)
- 1 box of Strawberry Jello mix (Sugar-Free, Fat-Free 1 ounce size)
- Red food coloring, optional
- 1/4 cup rainbow sprinkles
Instructions
- Preheat oven to 350 degrees. Line a cupcake pan with cupcake liners or spray with a non-stick spray.
- In a medium bowl mix cake mix, egg whites, yogurt, and 3/4 cup of water or you can use 3/4 cup diet 7 UP. Stir for 2 -3 minutes until well-blended. Place mixture into cupcake liners about 2/3 full.
- Bake for 18-20 minutes or until toothpick inserted comes out clean.
- While cupcakes are baking mix the contents of the Strawberry Jello mix with the full container of Cool Whip pudding mix. Stir until blended. Add a few drops of food coloring for color. Refrigerate for 1 hour.
- After cupcakes have cooled, ice the cupcakes with Cool Whip mixture and top with sprinkles.

I don’t see where you put the soda in, but it says you did in your opening paragraph. Forgive me if its a silly question. I don’t bake/cook at all! I’m wanting to try these for my daughters first bday, just want to make sure I have the recipe right.
