Skinny Broccoli Salad

This recipe has to be one of the easiest salad recipes to make and it is always a huge hit at Thanksgiving and Christmas dinner.  I always lighten it up by using a reduced calorie ranch dressing and I make sure not to add too much.  I also use reduced fat cheese but this is optional.  Feel free to add extra veggies to the salad or other toppings to make this recipe your own.  I hope you enjoy this recipe for Skinny Broccoli Salad as much as I do!

Skinny Broccoli Salad

Ingredients

  • 2 heads fresh broccoli, chopped
  • 1 head fresh cauliflower, chopped
  • 1/2 cup chopped red pepper
  • 1/2 cup chopped green pepper
  • 1/2 red onion, chopped
  • 1/2 cup green olives
  • 1 cup tomatoes, chopped
  • 1 cup reduced fat sharp cheddar cheese, shredded
  • 1 cup reduced-fat ranch dressing

Instructions

  1. Mix all ingredients together in a large bowl and toss with reduced fat ranch dressing.
  2. Refrigerate until serving.

    I have made this salad about a half dozen times already. Everyone I’ve made it for really loves it, THANK YOU. The salty tartness of the olives and the red onion, combined with the dressing and cheese, work great. The best thing is that it tastes even better the next day, so I make enough to have leftovers for lunch.

    Some chopped fresh dill really adds a lot! Also have made with crumbled blue cheese.

    Hello – I made this tonight and it was really good! Thank you! I omitted the olives (I can’t stand green olives)…but otherwise, very delish! It seems like it may be more of a spring/summer salad, so I’ll be making this again for sure!!

    Is the serving size a 1/2 cp, 3/4 cp, a full cup…? I know it says 1/12 but do you know what that is equivalent to? Thanks! I don’t want to have to stand there making 12 piles, lol.

      You shouldn’t have to make 12 piles, if you have a large measuring bowl, 8 cup or 12 cup, measure all of it in there, then divide by 12. I am going to make this but I will definitely cut the recipe in half. There are only 2 of us and even that much may be too much for us. One head of broccoli will last us a week. I do love this salad though, and will be taking it to work for lunch. So half the recipe will be perfect.

    It drives me nuts when they say 12 servings eat one serving size? What is that? Brooke 1/2 would be 6 servings, so that is wrong.

      Hi Jeanene, thanks for the question. 1/3 cup, but I am making this recipe on Sunday and will find out for sure as I will measure that recipe by cups. I’ll post when I make adjustments on Sunday. Thanks!

    Brook we know 1/12 of the recipe is the serving size, but how much is that. Geez these directions drive me nuts when they say 12 servings, serving size 1. What is it? Like Kelley said is it 1/2 , 3/4 1 cup. How much does it make total?

    Hi Brooke I’m sorry I misread your answer you didn’t say 1/2 you said 1/12 which of course we all know if it makes 12 servings. I still want to know what one serving is though and will wait for your answer.

    I’m very curious what the serving size is to…I log my food into an app called my fitness pal…would greatly appreciate knowing the serving size of this (1/4 cup, 1/3 cup, etc). It’s absolutely delicious! Can’t wait to make it myself!
