As a Mother, Dietitian, and NFL Cheerleader I am constanting running around all day long, and I know you all are too! Because we are always so busy, it is important to be sure we are getting a good breakfast to help sustain our energy through our busy day. My favorite thing to start off with in the morning is something with protein. A high protein breakfast helps break my hunger but also helps keep me fuller through the day compared to a high carbohydrate breakfast. I love eating eggs, like omlets or scrambled eggs, on weekend mornings when I am not so rushed and I can spend time preparing them. But recently I ran across a great idea for eggs that is quick and easy that I can use during the week! It will provide me with protein in the morning but not slow down my schedule with a lenghy preparation. So next time your in a rush, but want a high protein, fast, easy breakfast, try this!
Ingredients
- 2 Eggs (or 1/2 cup Egg substitute if you prefer)
- 2 Tbsp. Milk
- 2 Tbsp. shredded Chedddar Cheese (or reduced fat or fat free if you prefer), optional
- Salt and Pepper
Instructions
- Coat 12-oz. microwave-safe coffee mug with cooking spray. Add eggs and milk. Beat until blended.
- Microwave on High for 45 seconds, stir. Microwave until eggs are almost set, 30-45 seconds longer.
- Top with cheese; season with salt and pepper
