Breakfast is my favorite meal of the day and when I have a few extra minutes and not running around like mad to get out the door, I love taking the time to cook an actual meal for breakfast. I adapted this Chocolate Chip Protein Pancake recipe from Hungry Girl and it is one of my favorites. I love making these for breakfast, especially on Sunday mornings after church, I will invite my family over and cook a big batch of these to go with an egg white omelet and turkey sausage. Feel free to use any flavor of protein powder and you can add fresh fruit instead of chocolate chips.
Ingredients
- 1 scoop chocolate protein powder (I used Beverly International Chocolate UMP)
- 3 tbsp regular oats
- 4 egg whites
- 1 tbsp whole-wheat flour
- 2 tbsp skim milk
- ½ tbsp mini semi-sweet chocolate chips
- ¼ tsp baking powder
- 1/8 tsp vanilla extract
- 1 no-calorie sweetener packet
- Dash salt
Instructions
- Place all ingredients in a small bowl, except chocolate chips.
- Add 1 tbsp water and stir until thoroughly mixed.
- Fold in chocolate chips.
- Bring a large pan sprayed with nonstick spray to medium heat.
- Pour batter in the pan to form 5 mini pancakes.
- Once pancakes begin to look solid, flip and cook on other side.
- Once pancakes are slightly brown put them on a plate and top with sugar-free syrup and enjoy!
