This is a great healthy salad that is full of protein. This makes a large batch you can eat on for several days.
Ingredients
- 1 can each of Black , Kidney, Garbanzo & Navy Beans- rinsed and drained
- 1 large sliced green onion- both the green and the white parts
- Hand full each of chopped cilantro and parsley
- 4- ribs of celery- chopped
- 1 large red or yellow pepper
- 1 cup of Bulgur or cracked wheat- prepared as directed
Instructions
- 2/3 cup for red wine vinegar
- 1/3 cup of Olive Oil
- 1 Tabls. + 2 tsp. of cumin
- 1 tsp of chilli powder- or to taste
- 1 Tabls. of minced garlic
- 1 Tabls. + 1 tsp of dried oregano
- saltand pepper to taste
- I will serve this on a bed of raw spinach leaves.
