This is a great healthy salad that is full of protein. This makes a large batch you can eat on for several days.

Healthy Bean and Bulgur Salad

Ingredients

  • 1 can each of Black , Kidney, Garbanzo & Navy Beans- rinsed and drained
  • 1 large sliced green onion- both the green and the white parts
  • Hand full each of chopped cilantro and parsley
  • 4- ribs of celery- chopped
  • 1 large red or yellow pepper
  • 1 cup of Bulgur or cracked wheat- prepared as directed

Instructions

  1. 2/3 cup for red wine vinegar
  2. 1/3 cup of Olive Oil
  3. 1 Tabls. + 2 tsp. of cumin
  4. 1 tsp of chilli powder- or to taste
  5. 1 Tabls. of minced garlic
  6. 1 Tabls. + 1 tsp of dried oregano
  7. saltand pepper to taste
  8. I will serve this on a bed of raw spinach leaves.
