If you know me well enough, you know that one of my weaknesses and favorite cheat foods is a chicken bowl from Chipotle. Just talking about that place makes me hungry and I have to intentionally look away as I drive past a Chipotle everyday on my way to work and to the gym. I can also admit that I took my obsession a little too far when I asked for a Chipotle gift card for Christmas last year in the $10 gift exchange…I can’t believe I just shared that.
Well anyways, as of last night, I may have found a back-up plan to my occasional chicken bowl splurge! This best part about it is that I can actually feel really good about eating this recipe! You can also mix this with not only seasoned chicken and brown rice but you can also mix it with lean ground sirloin, and of course don’t forget to top everything with a little salsa. Enjoy!
Ingredients
- 1 bag frozen yellow corn (I used a bag of Steamfresh corn)
- 1 can reduced sodium black beans (rinsed and drained)
- 1/2 sweet onion, finely chopped
- 1 tablespoon finely chopped cilantro
- Juice of 1 lime
- 1 avocado, chopped
- 1 tsp chili powder
- 1 tsp sea salt
- 1 tsp black pepper
Instructions
- Prepare corn as directed on package.
- Rinse and drain black beans and empty into a medium sized bowl.
- Add cooked corn and onion to black beans and give a toss to mix ingredients.
- Next, add chopped cilantro, chili powder, sea salt, black pepper, and lime juice.
- Stir until ingredients are well mixed.
- Top with chopped avocado and serve.
