I’m not vegan, but my parents are. So I’m always trying to find tasty recipes that I can make them that my family will enjoy as well. My babysitter made these for me one day and they are delicious! I made them for my mom and she gave me a vegan thumbs-up! And what’s nice about vegan cookie recipes is that they are nutritious and no worries about eating the batter raw
Ingredients

- 1 cup almonds
- 1 cup rolled oats
- 1 cup whole wheat flour
- 1/2 tsp cinnamon
- 1/2 salt
- 1/2 cup maple syrup
- 1/2 cup apple sauce
- 2 tbs canola oil
- 1 cup dark chocolate chips (make sure no milk-fat in chips)
Instructions
- Instructions:
- Preheat oven to 350 degrees.
- Grind almonds and rolled oats in food processor to flour-like consistency.
- In a small bowl combine flour, cinnamon, salt with the almond-oat mixture.
- In separate larger bowl, combine maple syrup, apple sauce and oil.
- Gradually add in dry ingredients.
- Stir in chocolate chips.
- Drop by rounded tablespoon onto un-greased cookie sheets.
- Bake for 15 minutes or until golden brown.
- Cool on baking sheets for 2 minutes.
