Vegan Chocolate Chip Cookies

I’m not vegan, but my parents are. So I’m always trying to find tasty recipes that I can make them that my family will enjoy as well.  My babysitter made these for me one day and they are delicious!  I made them for my mom and she gave me a vegan thumbs-up!  And what’s nice about vegan cookie recipes is that they are nutritious and no worries about eating the batter raw :)

Vegan Chocolate Chip Cookies

Ingredients

  • Ingredients:
  • 1 cup almonds
  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/2 tsp cinnamon
  • 1/2 salt
  • 1/2 cup maple syrup
  • 1/2 cup apple sauce
  • 2 tbs canola oil
  • 1 cup dark chocolate chips (make sure no milk-fat in chips)

Instructions

  2. Preheat oven to 350 degrees.
  3. Grind almonds and rolled oats in food processor to flour-like consistency.
  4. In a small bowl combine flour, cinnamon, salt with the almond-oat mixture.
  5. In separate larger bowl, combine maple syrup, apple sauce and oil.
  6. Gradually add in dry ingredients.
  7. Stir in chocolate chips.
  8. Drop by rounded tablespoon onto un-greased cookie sheets.
  9. Bake for 15 minutes or until golden brown.
  10. Cool on baking sheets for 2 minutes.
