Lucky for you we have a delicious and easy to make healthier key lime pie alternative that will have you guessing if it is the real thing.
Ingredients
- • 1 reduced fat pie crust
- • 1/4 cup boiling water
- • 1 3oz. box sugar-free lime gelatin
- • 2.5 (6 oz) containers Yoplait Light Key Lime Yogurt
- • 1 8oz. container fat-free, sugar-free Cool Whip® whipped topping (thawed)
- Optional Garnishes:
- • Fat-Free Reddi-Whip® Topping
- • Fresh lime zest
Instructions
- 1. In a large bowl, dissolve gelatin in boiling water.
- 2. Stir in key lime yogurt with wire whisk.
- 3. Next, fold in whipped topping.
- 4. Stir mixture well and spread evenly onto crust.
- 5. Refrigerate for 2-3 hours until firm.
- 6. Top with Reddi-Whip and fresh lime zest.

I’m waiting to see if the ingredients gel before I add the Key Lime Pie filling to the crust. The recipe above didn’t say how much boiling water to dissolve the gelatin in before adding yogurt and Cool Whip. I ‘assumed’ the water amount was 1 cup as the amount given on the box to dissolve the Jello, but it would dissolve in a muh smaller amount of water, I’m sure. I think you should clarify the water quanity as well as the Jello size (it comes in 3 and 6 oz. sizes) and the Cool Whip, which also comes in 8 and 16 0z. sizes. I used the 3 oz. Jello size and 8 oz. Cool Whip size. I hope I didn’t ‘assume’ incorrectly!!

Regarding the key lime yogurt, I read the recipe as 2 1/2 containers of key lime yogurt – what size (ounces) containers?
Sugar Free Lime Gelatin comes in 0.3 oz size – is that what you use? I am really anxious to try this recipe. I use Granola ready made pie crusts from Bi-Lo for added nutritional benefits.
