Who doesn’t like a popsicle on a hot summer day? These are so easy, healthy and fun for the kids. You simply mix a few ingredients together, pour in a mold and freeze. For the container or molds you can you something as simple as a cup for the mold and a plastic spoon in a pinch for the handle. For $12-16 you can purchase reusable premade molds and sticks from Tovolo. There are also devices that will freeze your concoction in much less time (Zoku Quick Pop Maker at Williams- Sonoma).
Ingredients
- Watermelon- Blueberry Ice Pops
- ½ of a medium watermelon
- 2 Tbs. Of Lime juice
- 1 Tbs. Of Splenda (optional)
- 1 cup of fresh bluberries.
- Coffee Chip Ice Pops
- 2½ cups of brewed coffee
- 2 Tbs. Of Splenda
- 2 Tbs unsweetened cocoa powder
- ½ cup of mini chocolate chips
- 1 cup of low fat yogurt
- ¼ tsp. of Vanilla
- 1 cup of your favorite lowfat yogurt
- 1 cup of orange juice
- 1 cup of a pureed fruit
Instructions
- Watermelon- Blueberry Ice Pops
- Place all in a blender or food processor and mix.
- Pour into the molds, place the sticks and freeze for about 6 hours.
- (I also added 12 ozs. of Greek non- fat yogurt to the remainder of my juice)
- Coffee Chip Ice Pops
- Mix all in ingredients, pour in mold, place stick and freeze.
- Place the yogurt in first , place the stick in the yogurt and freeze for about one hour.
- Then pour a layer of orange juice and freeze for about an hour and then pour a layer of your pureed fruit and continue to freeze until frozen.
