Whole Wheat Country-Style French Toast with Strawberry and Blueberry Compote
Ingredients
- Strawberry and Blueberry Compote
- 1 pint blueberries
- 1/2 lb strawberries
- 1/4 c sugar
- 1 t orange juice
- 1 t orange zest
- 1/4 c water
- French Toast
- 1 load of whole wheat country-style bread
- 6 large eggs
- 1 1/2C milk
- 1/4 C Sugar
- 1 T Cinnamon
- 4 T unsalted butter
Instructions
- For the compote: Combine everything into a heavy bottomed pan.
- Bring to a boil, Reduce to simmer for 15 minutes, stirring every few minutes.
- Compote is done when bubbles get large and the syrup is nice & thick.
- It will thicken additionally as it cools.
- For the French toast: Preheat a griddle or large non-stick pan. In a large bowl, whisk together eggs, milk, sugar and cinnamon until smooth.
- Melt 2 tablespoons of butter on the griddle.
- Working in batches, dip each piece of bread in the mixture and then grill each piece of bread about 3 minutes on each side, or until firm and slightly golden brown.
- Transfer to an oven-safe serving dish and keep warm in oven.
- Repeat with remaining butter and bread.
- When ready to serve, drizzle French toast with compote and top with lightly dusted powdered sugar.
