Easy Beef Enchiladas

Turn up the heat in the kitchen with these easy and healthy beef enchiladas!

Easy Beef Enchiladas

Prep time: 15 minutes

Cook time: 20 minutes

Yield: 8 servings

Ingredients

  • 1 lb lean ground sirloin
  • 2 cans enchilada sauce
  • 1 cup reduced fat mexican cheese
  • 1 chopped onion
  • 1 small can of green chilies
  • 10 whole wheat soft tortilla shells (I used LaTortilla Factory Smart and Low Carb brand)

Instructions

  1. Preheat oven to 375 degrees. Coat a 9 x 12 inch pan with cooking spray.
  2. Cook sirloin on medium heat until done. Drain meat and set aside.
  3. Add onion to the pan and cook for 1-2 minutes until soft.
  4. Next, add green chilies to onion and stir. Add cooked sirloin to onion and green chilies.
  5. Mix meat mixture with one can of enchilada sauce and 1/2 cup of Mexican cheese, stir and cook for 1-2 minutes.
  6. Spoon meat onto center of tortillas and roll. Place tortillas with the seam side facing down into pan.
  7. Cook for 20 minutes and serve.

    I am a little confused by the nutritional information and want to make sure I understand before I make this for my family this weekend. The recipe says that it is for 6 servings and the comments say that it makes 8 servings. Also, what brand of tortillas do you use? I am having problems finding whole wheat torillas with less than 90 calories in them.

      Hi! I apologize about the confusion….the recipe makes 8 servings as I used all of the tortillas in the package. I used the LaTortilla brand but any low carb and whole wheat tortillas should work. Enjoy and thanks for your comment!

    Hi, I think there is a step missing. My husband chose to make this recipe for his once-a-week cooking night and he is a follow-the-recipe exactly kind of guy. I checked his pan of enchiladas right before they went in the oven and asked why there wasn’t any sauce on top. He said that the ingredients list had 2 cans of enchilada sauce and 1 cup of cheese, but the recipe directions only used 1 can of sauce and 1/2 cup of cheese. Thankfully we caught it and fixed it, but if beginner cooks are looking for an easy recipe, this one might trip them up if it’s missing directions!

    I’m pretty sure the last step should include pouring the second can of enchilada sauce over the wrapped tortillas and sprinkling the remaining 1/2 cup of cheese over top before placing in the oven.

    quick question, if you use 10 tortillas in this recipe, that makes 10 enchiladas. So how is this 8 servings? Wouldn’t it be 10 servings? Or did you only use 8 tortillas?

      Yeah the recipe doesn’t match the picture. There are clearly beans in the picture, but not in your recipe. And you definitely want to put another can of enchilada sauce on top so they don’t dry out.
