I love cooking with protein powder and this blueberry protein muffin recipe is delicious! You can bake them and eat them right away or store them as they make great snacks to throw in your gym bag or diaper bag.
Ingredients
- • ½ cup whole-wheat flour
- • 1 scoop vanilla protein powder, I use vanilla UMP brand
- • ½ cup skim milk
- • ¼ cup sugar-free pancake syrup
- • 4 egg whites
- • ¼ cup Splenda no calories sweetener (granulated)
- • 3 tbsp Splenda brown sugar (not packed)
- • 2 tbsp light whipped butter
- • 1/2 cup fresh blueberries
- • 2 tbsp no-sugar added applesauce (Try to get Mott’s Blueberry Delight!)
- • 1 1/2 tsp baking powder
- • ½ tsp vanilla extract
- • ¼ tsp salt
Instructions
- Preheat oven to 400 degrees.
- In a medium-sized mixing bowl, combine flour, UMP or other protein powder, Splenda, Splenda brown sugar, baking powder, and salt. Mix well.
- In a large-sized mixing bowl, combine skim milk, syrup, egg whites, butter, applesauce, and vanilla extract. Using an electric mixer or a whisk, mix until thoroughly blended. Don’t worry if butter does break up completely.
- Add dry ingredients in the first mixing bowl to wet ingredients in the large mixing bowl and mix until completely blended. Fold in blueberries.
- Line a 6-cup muffin pan or half of a 12-cup pan with baking liners and or you can use spray.
- Evenly distribute batter among the six muffin cups.
- Bake in the oven for about 22 minutes, until a toothpick inserted into the center of a muffin comes out almost clean. Enjoy!

Looks like a yum recipe. What is the measure on blueberries? Fresh or frozen work better?
I have always used 1/2 cup blueberries and I have only ever used fresh:) Hope you enjoy!:)
This recipe was actually pretty awful to me. I couldn’t eat them.
However, I threw a 6-muffin small pouch of regular Betty Crocker muffin mix into my batter and then baked. Delish! LOL And only half the sugar it would’ve been with just the regular muffin mix. I also added some fiber powder with the muffin mix to make them high fiber + high protein.

I just made these but took out the splenda and used liquid stevia. I also subbed the pancake syrup with honey. Delicious! You can tell they are made with protein powder due to the texture but I think it’s delicious! I love baking with protein powder.
